    The flagship wine of Domaine Mont, Dom Gris, takes its name from the fact that it is made exclusively from Pinot Gris grown on the estate.

    The vineyard is located in the Naranokidai area of Nobori, in the town of Yoichi, a region rich in oak trees such as konara and oonara. Surrounded by a forest of acorn trees (donguri in Japanese), the Pinot Gris vines grow in harmony with nature.

    The name Dom Gris also reflects winemaker Mr. Yamanaka's desire for you to experience the spirit of this natural environment when you taste his wine. Made from Pinot Gris grapes carefully cultivated by hand in his own vineyard, the winemaking process is as natural as the environment.

    After harvesting, the whole bunches are placed in a resin vat for about two months before being pressed. Fermentation begins spontaneously in the vat thanks to wild yeasts, and by the time of pressing, the grapes are fully macerated.

    After pressing and the end of primary fermentation, the wine is aged for 12 months in oak barrels from the Taransaud cooperage. Throughout the process, from transferring the wine to the barrels to bottling, Mr. Yamanaka uses gravity alone, no pumps. The wine is neither filtered, fined, nor sulfured.In 2023, Yoichi experienced a significant build-up of heat and many vineyards suffered extensive damage from birds at harvest time.

    At Domaine Mont, they were fortunate to escape major damage, but the yield was still very low. That said, the quality of the wine is remarkable. Even just after release, the aroma is expressive and the palate is already well balanced.

    This wine should be reserved for drinking over the next 3 to 5 years, and even beyond.

    The nose is aromatic, with honeyed stone fruit such as apricot. This is followed by dried floral notes, hints of new oak, white lily, violet, juicy grapefruit, and fresh pomegranate The minerality is pronounced, with wet stone and a savory umami flavor in the background and high acidity.

    At this stage, the new oak is not yet fully integrated. The body is light to medium with fairly abundant dry extracts. There are undulating flavors of dried flowers, orange zest, mixed red berries, raspberry, a hint of honey, sea salt, and distinctive savory notes that add dimension and complexity.

    This complexity develops over time in the glass. Japanese gourmets recommend this wine with raw fish and seafood, sea urchins, and fish dishes accompanied by balsamic sauces.

    THE STORY

    Mr. Nakayama originally worked for an architectural design firm in Seattle, USA. After returning to Japan in 2012, he went to Hokkaido to teach snowboarding. 80% of instructors were farmers, as winter is the slow season for agriculture in Hokkaido. Through these encounters with farmers, he became intrigued by agriculture.

    Off-season from spring to autumn for him, as an instructor, led him to work in a resort restaurant. It was then that he became sufficiently fascinated by wine to become a sommelier. He had originally intended to grow his own grapes, but had never learned about winemaking. That's why he went to Domaine Takahiko for training. After his training period from 2014 to 2016, he opened Domaine Mont himself.

    Location of the current vineyard was an abandoned plot of land for 15 years that turned into a forest, So he had to cut down the trees one by one with a chainsaw and level out the land. Today, however, vineyard is certified to JAS organic standards and the grapes are grown organically at Domaine Mont.
