      The flagship wine of the Estate, DOM Gray, draws its name from the fact that it is elaborated exclusively from Pinot Gris grown in the field.

      This vineyard is located in the Naranokidai region, in Nobori, in the city of Yoichi, a region rich in oaks such as Konara and the Oonara. Surrounded by a trees forest (Donguri in Japanese), the vines of Pinot Gray grow in harmony with nature.

      The name Dom Gray also reflects the desire of the vinenon Mr Yamanaka to make you discover the spirit of this natural environment when you enjoy its wine. Developed from Pinot Gray grown with hand care in its own vineyard, the vinification process is as natural as the environment.

      After the harvest, the entire clusters are placed in a resin tank for about two months before being pressed.

      The fermentation begins spontaneously in the tank with wild yeasts, and at the time of pressing, the grapes are fully macerated. After the pressing and the end of the primary fermentation, the wine is high for 12 months in oak barrels of the Tardanud Tonnellerie.

      Throughout the process, the transfer of wine into the bottling drums, Mr Yamanaka uses the severity alone, no pump. The wine is neither filtered nor glued, nor sulfur.

      In 2023, Yoichi experienced a strong accumulation of heat and many vineyards suffered significant damage caused by birds at the time of the harvest.

      At the Mountain Domaine, they had the chance to escape significant damage, but the yield was still very weak. That said, the quality of the wine is remarkable. Even right after its sale, the aroma is expressive and the palace already well balanced.

      This wine is to be booked for a tasting over the next 3 to 5 years, and even beyond.

      The nose is aromatic, core fruit candied honey, like the apricot. Then come from dried floral notes, nine oak shades, white lily, violet, juicy grapefruit, fresh grenade the minerality is pronounced, wet stone, with a tasty umami flavor back -Plan high acidity.

      At this point, the new oak is not yet fully integrated. The body is light to medium with rather abundant dry extracts. The waving flavors of dried flowers, orange zests, mixed red berries, raspberry, sea salt, and distinctive tasty notes that add from dimension and complexity.

      Complexity that develops with time in the glass. Japanese gourmets recommend this wine with raw fish and seafood, sea urchins, fish dishes accompanied by balsamic sauce.

      THE STORY

      Mr. Nakayama originally worked for an architectural design firm in Seattle, USA. After returning to Japan in 2012, he went to Hokkaido to teach snowboarding. 80% of instructors were farmers, as winter is the slow season for agriculture in Hokkaido. Through these encounters with farmers, he became intrigued by agriculture.

      Off-season from spring to autumn for him, as an instructor, led him to work in a resort restaurant. It was then that he became sufficiently fascinated by wine to become a sommelier. He had originally intended to grow his own grapes, but had never learned about winemaking. That's why he went to Domaine Takahiko for training. After his training period from 2014 to 2016, he opened Domaine Mont himself.

      Location of the current vineyard was an abandoned plot of land for 15 years that turned into a forest, So he had to cut down the trees one by one with a chainsaw and level out the land. Today, however, vineyard is certified to JAS organic standards and the grapes are grown organically at Domaine Mont.
