    Tsuyu, also known as mentsuyu, is a versatile Japanese condiment that can be used as a dipping sauce or soup base for cold or hot Japanese noodle soups. It is also very popular with soba and udon noodles and tempura.

    Origin of tsuyu is said to date back to the 1300s. Tsuyu is made from a dashi broth (kombu dashi or kombu & katsuobushi dashi) seasoned with soy sauce, mirin, sugar, and sometimes sake.

    To prepare this iconic condiment/sauce, ingredients for tsuyu are quickly boiled together, drained, and ready to eat. Flavor is rich, slightly smoky, with a depth similar to that of soy sauce. It is also slightly spicy and sweet. Tsuyu has a delicate yet intense flavor, both sweet and salty, with a perfectly balanced depth.

    Thanks to its subtle fish-like taste, tsuyu is often compared to fish sauce. When making soup with mentsuyu, it is essential to dilute the sauce, otherwise it will be too strong as a broth. It can also be reduced and used as a glaze for proteins or vegetables.

    Our artisan uses EU HACCP-certified katsuobushi dried bonito flakes to flavor his tsuyu. No preservatives, sweeteners, artificial colors, or seasoning additives (such as amino acids) are used. Bonito dashi (soup stock) is made in-house, ensuring a robust flavor.

    By adding kombu (kelp) extract to this bonito dashi, synergistic effect of umami creates a flavor that you can enjoy without getting tired of it, even when drinking soup down to the last drop.

    It can be used at a dilution of 5:1 for dipping sauce and 10:1 for pouring sauce.

    Recommendations: somen noodles, udon noodles, soba noodles, hard-boiled eggs, dashi-maki tamago (Japanese rolled omelet), oyakodon (chicken and egg rice bowl), marinated tomatoes, pickled eggplant, braised pork, kinpira burdock, simmered daikon, tempura dipping sauce, vegetable stew, etc.
