Umibudo (sea grapes literally in Japanese) is a kind of green cluster-shaped green algae.

The one we offer is high and harvested in a seawater very rich in minerals, drawn from 612 m deep in the ocean near Kumejima.

The quality of the umibudo we have selected is very popular with Okinawa's producing prefecture. The sea grapes, harvested manually, is then preserved in deep sea water, keeping all its freshness and stability.

Very important: In order to preserve the crisp and crunchy texture, drain into a colander and then dip immediately in a clear and cold water.

If the mouth is too salty, dive again 4 minutes in clear water. Drain, and taste immediately.

The grains crack under the tooth and release a delicately iodized flavor.

We recommend seasoning ideally with a Ponzu or a Sunnomono vinegar, a Tosazu condiment or Kanisu ...

Nice texture, but the flavour is not for everyone. Goes well in a salad or on top of cold dishes to give a crunchy bite, but it can be overwhelming if eaten alone.
