Our craftsman, Kagura no Sato, harvests its yuzu when it is perfectly ripe.
Fruits rind is then full of essence and the albedo is less.

Fruits are gently pressed to preserve rind and its sweetness.

Recovered peels are then subjected to a cold ventilation drying, thus preserving all the flavors.

Bark is then mechanically reduced to powder.
Powder obtained is of very high quality, rich in flavors, without exacerbated bitterness as in the majority of citrus powders.

Powder is then refined in Nishikidôri's maturation cellars to make a unique product.
