      This sake is produced from 100% Isehikari rice, free of chemical pesticides and fertilizer, which is certified by the Yamaguchi prefecture as "Eco 100", as well as the clear water of the aokage river stream that springs. At the foot of Akiyoshidai, the Eminent Karst Plateau of Japan.

      This is a fairly complex scale of measurement of the density of the saké with respect to the density of water, allowing to establish whether a saké is dry or mild, the higher the Nihonshudo or SMV.
       

      "Isehikari" is a new variety of rice discovered in the rice fields of the gods at the Sanctuary of ISE in 1989. This is a rare and precious rice that would be the "rice of God".
      It is a junmai-type saké, made with a rice at the 70% rice polishing ratio.
      First, the simple and earthy aroma derived from the rice resists slightly, then the thick tastes overlap with condensed attacks of nuts and grapefruit.
      Shortly after, the acidity slides gently on the tongue and umami flows throughout the mouth, leaving a persistent finish. A salty aftertaste, with mineral aromas continues beautifully.
      It is made of Umami flavors, typical of Junmaishu (pure rice wine).
      It can be served cold, but you can enjoy its different features at room temperature or slightly warmed.
      Compatibility with Japanese dishes : Sukiyaki, pizza with lotus roots, sautéed eggplants and peppers with meat and miso sauce
      Compatibility with European dishes (French): Candied chicken, grilled vegetables, white asparagus with the Dutch sauce, Camembert, grilled meat, which it amplifies the total taste.
      This saké blends perfectly with the steaks as well as the dishes of couscous and ethnic.
