Our Artisan, Kagura No Sato, produces its juice from fruits exclusively grown in natural agriculture for more than fifty years, certified organic recently, and harvested in Shiromi, a small village surrounded by mountains culminating at 1,000 meters above the sea level.

By the moderate sunshine of the culture terraces, abundant alluvial waters of the rocky and steep mountains, and thermal amplitudes between nights and days, these yuzus develop refreshing aromas and intense acidic flavors.

The Japanese usually talk about "Yuzusu" speaking of juice, that is, Yuzu vinegar. This comes from its powerful acidic notes. It is used as a condiment for grilled fish, vinaigrettes, broths, or to flavor the ponzus and other preparations based on soy sauce.

This juice will delight cocktails, glaciers, chocolatiers, pastry chefs (Charlotte, Curd, sabayons, pastry creams ...).
