In early spring, while the cold persists, bamboo shoots begin to go out of the ground in the beautiful bambookeey that extends in the mountains of Ouma, in the Kokuraminami region (northern Kyushu Island), with signs announcing spring.

Ouma bamboo shoots are carefully grown in pure natural water and in a red soil rich in minerals, so that they are very little aggressive and can be consumed raw, like a sashimi.

Bamboo shoots are grossed roughly to enjoy the texture and are combined with Fukuoka original soy sauce to create an Asian style vinaigrette with a scented sesa oil.

You will appreciate the powerful, round, almost biscuitable aromas, cooked vegetables, even bias, on a slight smoke rating. We love the pretty sugarness, the acidic notes, the roundness and the sweetness, the flavors of sesame and the grilled vegetable.
