The Japanese have developed a unique culinary culture around the fish, and especially around the Katsuobushi, elaborated by steaming the striped belly bonite and smoking it and dry.

Realization of a Dashi broth in Katsuobushi :
. Put to boil 500 ml of water in a saucepan.
. Pour 15 g flakes and boil 60 seconds.
. Pass the broth to the colander to remove the infused petals and not to press them to avoid bitterness.
Your broth is ready to be consumed or used for your culinary preparations.
