      This book uses the art of manga to teach you step by step all the cutting techniques of different fish and those of the maki and nigiri. An entire chapter is devoted to Shari, the famous Vinegar rice, which is the first condition of a good sushi.
      The authors are Hugo Yoshikawa, Mangaka and Franco-Japanese artist and Patrick Duval, founder of the Wasabi magazine and the Sushi School of the same name.
