Hirosaki Shimizumori Namba is a big, long shaped pepper. It contains 1.7 even 1.8 times more sugar than other peppers. It is also rich in vitamins A, C and E.
Very rich in umami, it pleasantly seasons all dishes. There is more taste when it is not so finely ground.
Our perfect combination : you will appreciate it to season a soup, spice up foie gras, noodles, pastas, panfried meat and vegetables. In Aomori, it is used to make ice creams and pastries. It can also be used to flavor ganaches, macaroon creams…
Almost 400 years ago, Tamenobu TSUGARU, lord of the Hirosaki feudal clan governing the Tsugaru region (Aomori Prefecture), brought the Hirosaki pepper from Kyoto and popularised its cultivation.
