Nori is an edible red alga that grows on the rocks in shallow waters. In the wild, the Nori alga is red with folded blades that can be red, roses, brunettes or dark green.

The Nori as we know it is made from a porphyra yezoensis algoid species. Cultivated, the Nori is produced in large quantities south of Japan, on the western facade of Kyushu Island. Algae farms are located along the coast. They have the form of fillet plantations just below the surface of the water. The nets are seeded from Pyropia.

Algae grows rapidly from the seed: the fresh nori is ready to be harvested after about 45 days. The harvest is on board boats or using machines, harvesting the upper layers of Nori, then putting the fillets in place. By harvesting only the upper layer, there will be more NiNi fresh to harvest 10 days later. Harvested, the Nori is cut, depulpée and the water is eliminated by pressure while the Nori is smoothed in fine leaves.

The leaves are then dried on a grid for hours or days, depending on their thickness and the ambient temperature. Again, modern times have streamlined this process thanks to technology and today the Nori leaves can be dried in minutes. Once harvested, the Nori seaweed is dried in leaves and takes a black or brown appearance. These Nori seaweed cups are needed on all caterers in Japan as containing for sofas (small salted ovens).
