Oranges and citrus fruits are called "Kankitsu" in Japan. Their juice is widely used in a wide range of seasonings, whether it's vinegars or Ponzu. The word "Ponzu" translates to "pressed juice of acid oranges" in Japanese.

The word comes from the Dutch "pons", which means "punch", and which has become Ponsu suite, a "mixed ingredient beverage". Finally, the suffix "su" has been replaced by "zu", which means "vinegar".

The Ponzu is a Japanese condiment sauce made, in general, from soy sauce or tamari, citrus juice, mirin, katsuobushi (bonus flakes), kombu and rice vinegar.

She is very appreciated as a condiment for the sashimi, the Shabu Shabu, the tataki of meat or fish, the gyoza, the cold colds, the tempura ...

The Ponzu is also excellent as a marinade or salad sauce. The Kombu gives the Ponzu sauce the same umami flavor as the Dashi, while citrus juice and vinegar add acidity and soy sauce brings salt.

Our Ponzu Kankitsu is very rich in citrus juice, nearly 30%: the very aromatic yuzu with notes of green mandarin, the Daidai mixing acidity and bitterness (close to the bergamot), the shiranui for his Sweetness and sugarness, lemon for its acidic and sometimes almost salty notes.

The fruit juice was associated with apple vinegar and light soy sauce. The mirin and the kombu respectively brings success and depth and then umami. What surprises with the Kankitsu Ponzu, it is the liveliness, the freshness, the balance between sugar and salt.
