The Ramen:

It is a dish composed of noodles immersed in a broth elaborated from various meats and bones (pork, chicken, beef), fish, seafood or vegetables, decayed deliciously of miso, soy sauce, soybean must, even Sake Kasu (Sake residue).

Each Prefecture claims its own special recipe. For example, Kumamoto is renowned for its broth and pork rat, Kagoshima for its rumbling in Kurobuta (local black pork) and chicken, and Tokyo for its pork-based shoyu shoyu, Chicken, vegetables and katsuobush dried bonus flakes.
