We have selected the variety Laminaria longissima Miyabe which we exclusively use the root, known for its powerful umami.
To do this, the root is dried and then aged for a long time.
Our perfect combination : we recommend this shredded kombu root pickled with vinegar or sunomono condiment, in your pasta, rice, salads, steamed fish, meat or fish tartars.
