Fushimi, Kyoto Prefecture, has been called the center of sake brewing for decades. The Saito brewery, producer of Eikun Junmai sake, has persevered, for more than 125 years, in the search for the ultimate flavor for the confection of its sakes, by using, for its brewing, mainly famous spring water Fushimi Nanai, pride of Fushimi.
Eikun Junmai sake has won the award for best Japanese sake for 14 years consecutively.
Eikun Jumai sake is pure koshu.

To benefit from the koshu categorization, sake must be matured for at least 3 years causing a change in the robe from pale to golden yellow or amber color and very rich and complex taste notes.
Maillard reactions between sugars and amino acids naturally present in sake explain this evolution throughout ripening.
This sake has been matured in the cellar since 1998 and reveals sweet and shiny aromas of honey and yellow peaches. The peaches fragrances gently fill your senses and there's a nice balance between sour and spicy tastes.
There is a unique depth to the sweetness of this slowly matured sake.
The flavors are clear, crunchy, with a refreshing sensation that evolves smoothly.

Our perfect pairings : grilled Iberian pork (loin, pluma), free range or accorn fed iberian pork in a mustard sauce, blue cheeses, grilled red meats, grilled fish.
