                                  Buckwheat flour from Japan

                                  Buckwheat flour is made from buckwheat grains, an annual plant from the Polygonaceae family, ground into powder.

                                  It is rich in nutrients such as B vitamins, dietary fiber, rutin, proteins, and minerals, which have beneficial effects on health: antioxidant properties, improved digestion, etc. Buckwheat flour is used to prepare soba noodles or Juwari soba (100% buckwheat) in Japan, as well as buckwheat galettes in France.

                                  Buckwheat flour production methods

                                  Stone-milled using a traditional millstone called "ishi-usu": Buckwheat grains are ground by slowly rotating a millstone, preserving the original flavor and aroma of the buckwheat.

                                  Milled with flour rollers: A more efficient method that produces buckwheat flour with a uniform grain size, though it may slightly reduce the flavor.
