    Sengetsu, meaning “crescent moon,” takes its name from Sengetsu Castle, another name for Hitoyoshi Castle, where the Sagara clan ruled the Hitoyoshi-Kuma region uninterruptedly for 700 years.
    Sengetsu boasts over a century of history and tradition. To create their shochu, they use only carefully selected high-quality rice and pure water from the Kuma River, sourced from the unspoiled nature of Hitoyoshi. Sengetsu Shochu is particularly popular among the people of Hitoyoshi, the birthplace of Kuma Shochu. Their shochu is the standard for Kuma Shochu, with a mild flavor and a hint of umami that goes perfectly with hot water.
    The word sengetsu does not only mean “crescent moon,” but is actually the type of crescent moon that is the thinnest, where the moon looks like a curved thread in the sky. The six stars surrounding the crescent moon on the label represent the six toji—master distillers—who have carefully protected the history of Sengetsu for over a century.

    Master distiller at the Sengetsu distillery blends the best rice shochu from the distillery and then ages it in oak barrels for at least six years. The fusion of the rich aroma of oak barrels that have matured over many years and the taste of rice shochu offers aromas of nuts, cherry candy, vanilla, and spices.
    Oak notes are prominent, evoking freshly cut wood in summer.
    Color is amber and golden.
    Palate is smooth, rich, and almost creamy. The slightly woody notes of oak and hints of vanilla are present.
    This shochu can be enjoyed neat, after a meal, on ice or at room temperature, or diluted with 1/3 very cold water when tasting grilled beef, hard cheeses (Comté, Parmesan, Mimolette) or even a good chocolate dessert.
