Glutinous rice shigahabutaemochi - Wakai Noen brand -

This rice, grown by Wakai Noen since the early 2000s without use of pesticides, is known as the "king of sticky rice". "Shiga" refers to the Prefecture, "Habutae" is a silk fabric of the highest quality used to make kimonos and "Mochi gome » is glutinous rice.

Unlike other glutinous rices, it is immaculately white in color; so tender that it melts when boiled in ozoni (Japanese mochi soup). This rice is a favorite for high-end pastries in Japan. This is a great vintage of glutinous rice for connoisseurs.
