Soba are noodles made from buckwheat flour, almost as thick as spaghetti. The most qualitative are made to 80% buckwheat flour and 20% wheat flour.

Composed of 1200% of buckwheat flour, they are more brittle to cooking. The soba consume hot or cold. Soba noodles are part of traditional Japanese cuisine from the Edo era (1603 to 1868). At that time, Soba were consumed at the end of each month and were called Misoka-Soba.

It was a special meal, celebrating good health to live a month. Hot soba are served in a specific deep bowl filled with broth and ingredients chosen in accompaniment. It is not necessary to have a spoon for drinking broth because everyone is supposed to drink directly in the bowl. The bowls in Soba have a particular form.
