Ingredients (for 2 servings):
1 bundle of somen noodles (ref. NISIBO11)
30 g of white sesame paste (ref. NISYS33)
30 g of kombu dashi broth (ref. NISST36)
2 g of usukuchi soy sauce (ref. NISSK21)
1 g of wasabi oil (ref. NISNISHOT)
13 g of dried Karasumi bottarga
A small amount of fresh herbs
Preparation of somen noodles recipe with sesame :
1. Cooking the somen noodles
Boil the somen noodles in a pot of water for 2 minutes.
Cool them immediately in ice water to stop the cooking process and achieve the perfect texture. Drain.
Coat the cooled noodles with 1 g of wasabi oil.
2. Preparing the sesame sauce recipe for somen
In a bowl, mix 30 g of white sesame paste, 30 g of dashi broth, and 2 g of usukuchi soy sauce.
Stir thoroughly to achieve a creamy and well-balanced sauce.
3. Plating the dish
Arrange the somen noodles on a plate and drizzle them with the sesame sauce.
Finely grate 13 g of Karasumi bottarga directly over the noodles for an intense umami flavor.
