    Morita sake brewery is located in Kosugaya, on the Chita Peninsula in Aichi Prefecture, in the geographical center of Japan. Morita began brewing sake in Kosugaya, facing the sea, nearly three and a half centuries ago. Here, the weather is warm from spring to fall. In winter, cold winds blow down from the mountains. For the master brewer, this climate is ideal for brewing sake, and it is in winter that the process is controlled with the greatest precision.

    This Junmai Daiginjo sake is characterized by its magnificent Ginjo aroma and rich rice flavor. The fresh flavor is achieved by keeping the sake unpasteurized for a long period of time. “Biroka,” a light filtration method that does not involve filtering through activated charcoal, is used to remove color and turbidity, giving the liquid a yellowish color and the magnificent aroma unique to Junmai Daiginjo sake.

    It resembles an elegant white wine at low temperatures and acquires the structure of a medium-bodied white wine or an orange wine as the temperature rises.
    The aromas evoke melon, quince, cotton candy, and sea breeze.
    On the palate, a slight acidity and sweetness are at the center of the mouth, with a toasted note and a hint of bitterness balancing the whole.
    The aftertaste is medium. Umami and sweetness appear gradually and linger.

    This sake is perfect for tasting with roast pork, melon, yellow peach, pear accompanied by cheese and dry ham, chicken fricassee, country pâté, oysters (raw, smoked, au gratin), cheeses (washed, Parmigiano, Reggiano), tempura, grilled fish, or even an excellent Sukiyaki fondue
