Why is Yamagata rice so delicious?
- climate is very hot in summer and very cold in winter Abundance of snow, which covers and improves the soil, means that rice can be grown in optimal conditions.
- presence of pure spring water (from the Mogami River) ensures high-quality irrigation.
- composition of soil, a mixture of earth and sand rich in silica, ensures the cultivation of high-quality, hardy rice. Selected farmers are all true rice artists, with traditional, manual methods of growing and processing rice.
Uniformity of grain size and shape is astonishing. Rice is immaculately white after cooking, rich in perfumes and fragrances. Rice cultivation is monitored from the moment the fields are sown. Rice is husked as it is ordered, to preserve its texture, flavor and aroma.
Yamagata N°128 glutinous rice is used to make famous mochi (rice paste), a traditional pastry usually eaten at New Year's Eve. Mochi is a rice-based preparation that accompanies many Japanese recipes.
