A rare drink, it is bottled undiluted and unfiltered without the first typical pasteurization of sake.
The second pasteurization is done by hand, bottle by bottle.
The sake is ripened at extremely low temperatures to balance flavors and maintain quality.
This sake is fresh and vibrant, with opulent aromas, a refreshing scent, fruity flavors of green apple, pear, lemon, a slight minerality, a dry finish, an elegant acidity.
It should be noted that the umami of this sake becomes more expressive after 2 to 3 days of opening, kept in a cool place.

Founded in 1895, Joyo Shuzo is the only brewery located in the Yamashiro region south of Kyoto.
This region has been famous since antiquity for its ume plum trees as well as for the high quality of its very soft underground spring water suitable for brewing activities.
The Joyo Shuzo house sources rice from local terroirs: Kyoto Iwai, Yamada Nishiki from Hyogo…
The Toji (master brewer) produces aged in bottle, raw in the bottle, unfiltered, with a fresh umami and lively acidity.
