Takagi Shuzo The story of the Sake Takagi Shuzo Brewery, located in AkaOKa, Kochi Prefecture, goes back to the Edo period. From the epo epo at the Meiji era, akaoka prospered as a merchant city, enriching thanks to the salt industry (important presence of salt marshes) and maritime transport. It is also said that at that time, seven brasseries of Sake drove into the city. The Takagi family appears for the first time in a document in this region, in the register of residents of 1878 (Meiji 11), where Takagi Kiemon reports a change in his seal. Kiemon dies in 1905 (Meiji 38) at the age of 77; The Takagi family had roots in AkaOKa since Edo's time. The Takagi family, also active in rice trade and sericulture, has embarked on the production of large-scale saké in 1884 (Meiji 17). The saké marketed by the founder, Takagi Kumataro, became popular under the brand "Kikumusume". In 1998, Takagi Shuzo began working on the bracking of the Sake using "100% Kochi Local Ingredients" and more particularly the new local variety of Rice in Sake: "Gin No Yume". The water used for brewing remains a moderately gentle groundwater from the monobe river. The brewery supplies yeasts near the Kochi Prefecture Center with a capacity to offer more than ten kochi yeast varieties, all developed by the center. These unique yeasts make it possible to develop fresh and fruity flavors, evoking banana, apple, melon. All Sakes produced by Takagi Shuzo are distinguished by their ability to fit perfectly with the dishes, which makes them easy to drink without weariness and leaves them a refreshing aftertaste. They have already won prizes at various competitions, including the National Tasting Competition of New Sakes, and are needed as new local sakes to discover in Tosa. In 2017, Mr Ippo joined the brewery as a future sixth generation brewer. After studying the brewing sciences at the Tokyo University of Agriculture, the latter became Tooji or Maître Brasseur, in 2019 under the direction of Mr Naoyuki, the current owner. From its first year in this position, he realized the remarkable feat of winning the highest distinction, the platinum, at the London Sake Challenge 2020. He is currently exploring the creation of a "sixth generation saké" that will propel the Mr Naoyuki's Mr Sake Brewing End Further, While Perpetuating Traditional Flavors, sponsoring local products.
