What is karaage ?

Karaage is a japanese frying technique primarily used for chicken, but it can also be adapted for fish, shrimp, meat, or vegetables. In Japan, it is commonly found in street food stalls and konbini (convenience stores). Enjoyed as a snack or appetizer with a squeeze of lemon or dipping sauce, it can also be served as a main dish with rice or miso soup.

Karaage recipe

Ingredients (for 2 people) :

- 4 boneless chicken thighs

- 100 ml yuzu marinade base (NISAPY300A)

- 60 g tempura flour (NISNPN002)

- 1 egg

- Vegetable frying oil

- Scallion ponzu sauce (NISIHF1)

Preparation steps :

- Preheat the oil to 175°C (350°F).

- Cut the chicken thighs into pieces about 1.5 to 2 cm in size.

- Marinate the pieces with the yuzu Marinade Base (ideally 2 to 3 hours before and keep refrigerated).

- Drain the marinated pieces.

- In a bowl, coat each piece with the tempura flour and add a whole egg.

- Mix everything well to ensure even coating.

- Fry for 7 to 10 minutes, depending on the thickness of the pieces.

- Place on absorbent paper and serve hot.

- Enjoy with ponzu sauce (NISIHF1) or any other ponzu sauce from our range, varying according to the season.

What to eat with karaage ?

This delicious japanese fried chicken can be paired in many ways to create a balanced and flavorful meal.

Traditionally, it is served with a bowl of plain white rice, which helps balance the crispiness and savory taste of the chicken. A bowl of miso soup is also a great complement, adding a light and comforting touch to the meal. Vegetables play an important role in balancing flavors. A shredded white cabbage salad, dressed with sesame sauce or ponzu vinaigrette, adds freshness and lightness. Tsukemono, the famous Japanese pickles such as marinated daikon or salted cucumbers, provide an acidic contrast to the richness of karaage. Finally, to enhance the meal, a light sake or umeshu, the sweet and fragrant plum liqueur, will elevate the tasting experience.

Whether as a main dish or as part of a more elaborate Japanese meal, karaage lends itself to many delicious combinations for a true taste sensation.

Which Sauce Goes with karaage ?
