Yuzu is indisputably Japan's emblematic citrus fruit, combining aromas and flavors of green mandarin and citron. It is rich in vitamin C, beta-carotene and hesperidin, which have strong antioxidant properties, and offers a range of health benefits, such as preventing disease and aging, relieving fatigue and improving blood circulation.

Its fragrant components, such as limonene, are reputed to have an excellent relaxing effect.

Our craftsman, Kagura No Sato, produces his yuzu kosho exclusively from fruit grown in natural agriculture for over fifty years, and recently certified organic, and harvested in Shiromi, a small village surrounded by mountains reaching 1,000 metres above sea level.

Thanks to the moderate amount of sunshine on the cultivation terraces, abundant alluvial waters of steep, rocky mountains, and thermal amplitudes between nights and days, these yuzus develop refreshing aromas and intense tangy flavours.

Yuzus are picked when the weather cools and they are fully ripe. They are peeled by hand, fruit by fruit, and marinated with red chillies grown on our artisan's farm. Red chillies have absorbed e summer heat and become spicy.

Salt content is kept to a minimum. Yuzu peel texture, aroma and taste harmonize with red pepper sweetness and spiciness to create a brightly colored yuzu pepper. Yuzu kosho is the perfect spice for seasonings, marinades, sauces...

It is a delicious accompaniment to fish (grilled or poached), grilled white or red meats, shellfish, smoked salmon, mixed salads, vegetables, fish, beef or veal tartars...
