For more than a century, Yamamoto Miso has produced quality miso.
Their products are recognized regionally and renowned near the purist Japanese Chefs. The rice and soybeans used come exclusively from Japan: Niigata for rice, Niigata and Hokkaido for soybeans.
The proximity of the sea and more particularly the fish Nigisu, Glossanodon semifasciatus, influenced Yamamoto company in the creation of a very particular miso made based on this fish.
This miso has been aged for 10 long years in wooden barrels and made with the best Niigata rice and the best soya from Hokkaïdo, salted with sea salt.
