Red shiso mocktai : a japanese non-alcoholic cocktail

Ingredients for the japanese red shiso mocktail :

For the mocktail :

- 45 ml of red shiso infusion

- 60 ml of jasmine infusion

- 10 ml of vanilla syrup

For the red shiso foam (optional) :

- 20 ml of sugar syrup

- 60 ml of red shiso infusion

- 250 ml of water

- 1 egg white

Preparation of the japanese cocktail :

The mocktail base: In a shaker filled with ice, pour the red shiso infusion, jasmine infusion, and vanilla syrup. Shake vigorously to mix and chill. Pour into a tumbler glass also filled with ice, and add a shiso leaf.

The airy shiso foam: In a siphon, mix the sugar syrup, red shiso infusion, water, and egg white. Add a CO2 cartridge and shake vigorously for at least 10 seconds. Refrigerate the siphon for a minimum of 30 minutes (ideally 1 hour or more) to achieve the perfect texture.

The final assembly: Just before serving, add a dollop of shiso foam on top of the alcohol-free Japanese cocktail. This indulgent touch adds an exquisite creaminess and elevates the floral and herbal aromas of the drink.
