Ingredients :

4 large eggs

60 ml whole milk

30 g flour

½ tsp baking powder or baking soda

26 g granulated sugar

Vegetable oil

Vanilla soy sauce syrup to accompany your fluffy pancakes (Ref. NISNITS2)

Preparation :

Separate the eggs:
Separate the egg whites from the yolks.
In a large bowl, mix two egg yolks with the milk.

Prepare the pancake base:
In another bowl, mix the flour, baking powder, and matcha powder.
Add this dry mixture to the wet ingredients and stir until a smooth batter forms.

Whisk the egg whites:
Whisk the egg whites from the 4 eggs, gradually adding the sugar. Whisk until the whites are firm and glossy.

Incorporate the egg whites:
Gently fold the whipped egg whites into the batter using a bottom-up motion to avoid deflating the mixture.

Cook the fluffy pancakes:

Preheat a non-stick pan over low heat. Lightly oil the pan, then wipe off the excess with a paper towel.

Place a 3 cm-high ring mold in the center of the pan and fill it with the mixture.

Remove the mold: Be careful when handling the ring mold, as it may be very hot.

Cook for 4 to 6 minutes on each side: Ensure the pancake is thoroughly cooked in the center to prevent it from collapsing.

Cooking tip:
Check that the pancakes are fully cooked in the center before removing them from the cookie cutter to avoid them collapsing.

Plating and serving:
Serve the pancakes while still hot, with a drizzle of vanilla soy sauce syrup for an irresistible sweet-salty touch.

These pancakes are perfect for pairing with green tea or coffee. The matcha powder adds a delicate and unique flavor, enhanced by the syrup. Ideal for impressing guests or simply treating yourself.
