During the Edo period, the favourite drink imported by Nagasaki people, from the Netherlands, was called "pons".  It is said that ponzu was made in imitation of the "pons".

Kappou toshi is the Japanese cuisine restaurant, which is opened in 1978 by the person who had been the executive chef of Restaurant Fuukirou. After that, in 2009, they also started the company which can sell various condiments and cooked dishes etc. made by utilizing their techniques of cooking. They place emphasis on keeping the traditional way of manufacturing which should be taken over to posterity.
