Ta Junmai Ginji Saké je izdelan iz EHime Matsuyama MII Rice, smučarski riž, ki je malo prilagojen pivovam sakéja, vendar je KOJI enostaven za proizvodnjo in popolnoma prilagojen nizki fermentaciji Ginji.
