The sakeJunmai Daiginjo, the ultimate form of Ginjo, is a prestige sake. It is characterised by a rice-polishing rate of 50% or less, meaning that more than half of the rice grain is removed. This process creates particularly refined sakes that are both beautifully balanced and endowed with great aromatic richness.
