Professional Japanese yakitori barbecue
The Japanese word "sumibi" or "sumibiyaki" refers to food grilled over a charcoal fire. Charcoal cooking adds a rich, smoky flavour to every dish and enhances the taste of "umami", a deep, almost indescribable flavour well known in traditional Japanese cuisine.
