Yuzu

Yuzu is a citrus fruit from the Citrus family (Citrus Junos) that grows on a thorny tree (spines of 2 to 5 cm). A yuzu fruit weighs 120 to 130g. It has a thick and irregular skin. Its characteristic freshness and aroma are highly prized in Japan, much like the lemon, which is widely used in culinary preparations. The fruits are ripe and bright yellow. The rind of the ripe fruit is a deep to golden yellow. Sometimes it displays a few brownish or black marks with a scaly appearance. This is a natural physiological reaction of the fruit, characteristic of yuzu. These few unsightly marks do not affect the fruit in any way and are a sign of its authenticity. They are caused by stress on the tree from weather conditions, soil cultivation, or scars from the fruit being pierced by the tree's sharp thorns.
