This premium sake was created after 1955, during Japan's period of rapid growth and prosperity. The bottle is reminiscent of a French cognac bottle, a symbol of quality.


Description
The Toyama Prefecture, the production region of this sake, is highly renowned for the quality of its seafood, fish, shrimps and other crustaceans and shellfish.
The Ginban Junmai Daiginjo Kome no Shin sake is made from Yamadanishiki rice from Hyogo Prefecture, the highest quality rice for sake brewing, and water from the springs of the Kurobe River, one of the 100 famous waters for sake brewing in Japan.
As its name suggests, the rice is slowly polished down to the "core" (its name "Kome no Shin" means inspiration from the core of the rice) over 48 hours, then it matures at low temperature for a long period.
With an appearance revealing a golden lustre in a crystalline setting, the first flavour evokes honeysuckle with small white flowers.
Then comes a superb fruity aroma, at once sweet and deep, reminiscent of white peach or lychee.
It is a dry sake on the palate with notes of green bamboo and chervil, while the taste, deep and mellow, is characteristic of sake produced with spring water.
This sake is recognised for its ability to enhance the flavour of food.
