Binchotan udon with white sesame: a quick and indulgent Japanese recipe

Ingredients

  • 1/2 bunch of black binchotan udon NISMNK001
  • 2 tbsp white sesame paste NISYS33
  • 2 tbsp concentrated white dashi stock NISTYT022
  • 1/2 tsp 5-year-aged shoyu soy sauce NISSK15B
  • 1/2 tsp yuzu and Hon'Wasabi rice oil NISNISHOT1

  • 1 tsp yuzu sesame seeds NISMNR005

Ingredients for 2 people:

  • 1/2 bunch of black binchotan udon NISMNK001
  • 2 tbsp white sesame paste NISYS33
  • 2 tbsp concentrated white dashi stock NISTYT022
  • 1/2 tsp 5-year-aged shoyu soy sauce NISSK15B
  • 1/2 tsp yuzu and Hon'Wasabi rice oil NISNISHOT1
  • 1 tsp yuzu sesame seeds NISMNR005

    Preparation:

    1- Prepare your dashi stock (allow 10% stock and the rest water).

    2- Boil the udon for 7 minutes. Cool in iced water and drain.

    3- Pour in the rice oil and mix.

    4- For the sauce, mix the white sesame paste, the dashi stock and the soy sauce.

    5- Arrange the udon with the sesame sauce.

    6- Sprinkle with the yuzu sesame seeds, and it's ready!
