Tasting notes

Perfect pairings

We recommend this Gozenshu with a tasting of blue-veined cheeses (roquefort, fourme d'Ambert, gorgonzola) or, ideally, with a pear compote on a puff pastry with lemon zest or yuzu marmalade (by contrast, fat calls for acid). This saké will also pair well with pan-fried foie gras escalopes, foie gras terrines, a veal escalope Marsala, veal kidneys with Madeira, pasta with cream...

Description

The Gozenshu Gen is a light straw colour with a cloudy appearance. On the nose, the notes are initially characteristic of steamed rice, before powerful aromas of candied pear, pear compote and honey emerge, all with an abundance of freshness.
The nose is very "spumante" and gives the impression that one should prepare for a slight effervescence on the palate. The palate is very smooth, sweet, and evokes the Chenin side of the Loire, late harvest wines; an impression of medium-dry softness, pear compote or pear paste, with light hints of salted butter caramel.

Our advice
Our tip: Rotate the bottle 180 degrees (upside down) 2 or 3 times before opening and serving. The saccharification of the rice starch generates glucose, which has a higher density than the rest of the liquid. The glucose therefore settles at the bottom of the bottle, and this rotation allows it to distribute evenly throughout the bottle.

Katsuyama Sake

A great lover of art and gastronomy, Lord Date Masamune, wishing to secure his supply of sake, tasked six prosperous families with establishing breweries producing premium sake from the finest quality rice. The Isawa family thus founded the house of Katsuyama and crafted artisanal sakes known as Gozenchu, the production of which also helped to supply the lord's armies. Three and a half centuries later, the Isawa family alone carries on this legacy of excellence, now led by the twelfth generation, Jihei Isawa, and continues to supply the Date family — now in its 34th generation — with an exceptional range of nihonshu, including Gozenchu once reserved for lords, renowned for their rarity and incomparable character.
