Yuzu Kosho and others (ume/jabara)

This condiment originating from Japan is the magnificent result of the fusion of the heat of chillies with the tangy freshness of Yuzu. "Yuzu" is that Japanese citrus fruit with a unique flavour blending notes of green mandarin and lemon, and "Kosho" means pepper. This combination of words literally means "spicy yuzu paste".

This paste can be used in different ways: to enhance your sushi, to wonderfully elevate your seasonings, marinades and sauces. It is enjoyed as an accompaniment to fish, grilled meats (white and red), shellfish, composed salads, vegetables, tartares… Its versatile character makes it a must-have for Japanese cuisine enthusiasts and professional chefs seeking new culinary sensations.

FAQ YUZU KOSHO

What is Yuzu Kosho?

Yuzu kosho comes in 3 main variations.

  • Green yuzu kosho is the classic and traditional version of this condiment. It is prepared by combining fresh green chilli with green yuzu zest, which also lends it a mildness without bitterness. This variety offers a vibrant and fresh flavour.
  • Red yuzu kosho is a bolder, spicier version of this condiment. This variety offers an intense heat and a robust aroma, with a touch of acidity and citrus. It is ideal for those seeking a more pungent and spicy culinary experience.
  • Yellow yuzu kosho is a lesser-known but equally delicious variant compared to its green and red counterparts. Its distinctive quality lies in the use of yellow chillies and ripe yellow yuzu, creating a balanced and slightly sweet flavour, while retaining the spiciness to stimulate the taste buds.
