This Junmai Daiginjo sake is crafted with "Yuminariho" sake rice, a variant of Ise-nishiki, which is said to be the origin of Yamada-nishiki





Description
It was recently identified at Mie University and is a unique rice suited to sake brewing that can only be used by our brewer. The brewing water comes from "Miyakawa", selected as one of Japan's 100 best rivers.
The traditional brewing method, known as soft water brewing (soft water facilitates fermentation and brewing), is passed down as a divine technique.
Junmai Daiginjo Shiki Rich sake is characterised by its flavours evoking strawberry, the refreshing sweetness of pear and green apple, a grace and mellowness reminiscent of the richness and sweetness of lychee, followed by Japanese melon.
