Ingredients (for 2 to 3 people):
For the wok:
- 1 packet of soba (ref. NISBS01 or NISBS02)
- 1 chicken breast fillet (120 g)
- 2 carrots
- 1 red onion
- 2 curly kale leaves
- 1 tbsp of olive oil
For the sauce:
- 1 tbsp of red miso (ref. NISMK31)
- 5 cl of boiling water mixed with ½ tsp of dashi (ref. NISTYT022)
- 2 tbsp of soy sauce (ref. NISSK21)
- 2 tbsp of golden sesame oil (ref. NISYS31, alternative: ref. NISYS31)
- White sesame seeds (ref. NISKU10-M)
Preparation
Step 1: prepare the sauce
In a bowl, mix the miso with the hot water containing the dashi to dissolve it.
Add the soy sauce and the sesame oil. Set this flavourful sauce aside.
Step 2: cook the soba
Cook the soba following the packet instructions.
Once cooked, plunge them immediately into iced water to stop the cooking process. Drain carefully and set aside.
Step 3: prepare the vegetables and the chicken
Peel and rinse the vegetables. Thinly slice the cabbage and the red onion. Cut the carrots into thin strips using a peeler or a mandoline.
Cut the chicken breast fillet into small pieces.
Step 4: cooking
Heat the olive oil in a sauté pan.
Sauté the onion and the chicken until well seared on all sides.
Add the carrots and continue cooking for 3 to 4 minutes. They should remain tender yet crunchy.
Then add the cabbage and the soba. Mix gently and coat with the reserved sauce to thoroughly coat the ingredients.
Step 5: finish and serve
Continue cooking for 1 to 2 minutes to heat everything through evenly.
Serve immediately, sprinkling the dish with white sesame seeds for a final crunchy and indulgent touch.
