For the shiso foam (optional):
- 20 ml of sugar syrup
- 60 ml of shiso infusion ref. NISSNA1
- 250 ml of water
- 1 egg white
Cocktail preparation:
1. The mocktail base
In a shaker filled with ice, pour the red shiso infusion, the jasmine infusion and the vanilla syrup. Shake vigorously to mix well and chill everything. Pour into a tumbler-type glass also filled with ice, and place a shiso leaf on top.
2. The airy shiso foam
In a siphon, mix the sugar syrup, the shiso infusion, the water and the egg white. Add a CO2 cartridge and shake vigorously for at least 10 seconds. Place the siphon in the refrigerator for a minimum of 30 minutes (ideally 1 hour or more) for a perfect texture.
3. The final assembly
Just before serving, add a touch of shiso foam on top of the alcohol-free Japanese cocktail. This indulgent note brings an exquisite creaminess and enhances the floral and herbaceous aromas of the drink.

What is red shiso?
Red shiso, also called purple shiso or Japanese basil (Perilla frutescens), is an essential ingredient in Japanese cuisine, including in patisserie. Its purple variety is particularly prized for its natural colouring power, used notably in the preparation of umeboshi plums, certain sakés and sesame seeds.
As an aromatic plant, red shiso flavours many recipes with its complex taste notes — at once herbaceous and tangy — reminiscent of basil, hibiscus, acerola, red cherry and lemon balm.
Renowned for its health benefits, it is also classified among medicinal plants and appreciated for its anti-inflammatory, antiseptic and antispasmodic properties. The dried shiso flakes can be used to make a very refreshing juice, where its tangy notes offer a uniquely thirst-quenching sensation.
