Japanese sesame in a few words:

Sesame (goma) is an annual plant of the Pedaliaceae family. It is believed to have first been cultivated in India around 3500 BC. Its seeds are primarily used as an ingredient in food products and oils, and are an essential element of Japanese cuisine. Sesame is classified according to the colour of its outer shell: white sesame, black sesame and yellow sesame (or golden sesame). White sesame has a mild flavour, black sesame has a powerful aroma and yellow sesame is fragrant and rich in flavour. Sesame, a condiment appreciated by both Japanese and Westerners, can be found in oils, sesame pastes, sauces, furikake, dressings and more.

White sesame

Characterised by its sweet and fragrant flavour, it pairs well with all kinds of foods. It is mainly cultivated in South-East Asia, Central and South America, and North Africa. In Japan, white sesame produced on the island of Kikai, in Kagoshima Prefecture, is particularly renowned. White sesame has a discreet colour and can be used without altering the appearance of foods.

Black sesame

Black sesame has a more moderate fragrance and a unique flavour. It is low in fat, making it an ideal healthy food for taking care of one's health. It is mainly cultivated in South-East Asia, particularly in China, Myanmar, Thailand and Vietnam.

Golden sesame, or yellow sesame

Characterised by a rich aroma, a pronounced sweet flavour and a very attractive appearance. Production is low and this type of sesame is mainly imported from Turkey. Japanese golden sesame is very rare and tends to be more expensive.
