
What is katsuobushi?
The term "Katsuobushi" commonly refers to smoked and dried skipjack tuna. Katsuobushi encompasses several secondary products, each bearing a different name depending on the stage and degree of its preparation.
The dried skipjack tuna (Katsuwonus pelamis) that has been boiled, smoked and dried is called arabushi. When the arabushi is shaved and trimmed to improve its shape, it is then called hadakabushi. By subsequently cultivating a mould (microscopic fungus) on the hadakabushi two or more times, karebushi is obtained.
The generic term for these products is katsuobushi.
