RAMEN FAQ

What makes up a ramen?

Ramen has the particularity of having an infinite number of combinations and broth bases. You will find broth made from various ingredients according to your preferences (fish, meat, bones...) and its seasoning (miso, soy sauce...). Then you will find the different toppings to add depending on your tastes and expectations from a nutritional standpoint:

Toppings to add to your ramen

Once the broth base and the ramen noodles have been added, add the ingredients of your choice. These toppings are carefully placed on top of the noodles and are not mixed directly into the soup. The main ramen ingredients are as follows:

Nori (dried seaweed): nori is a dried seaweed cut into thin sheets. It is used to add a touch of umami and a light marine note that pairs perfectly with the ramen broth.

Narutomaki (spiral-shaped surimi): narutomaki is a processed fish paste, often called surimi, shaped into rounds decorated with a pink spiral. This topping adds a touch of colour and a subtle fish flavour.

Spring onion: often used for its fresh and slightly pungent flavour. It adds colour and freshness to the dish, balancing the richer flavours of the broth.

Chāshū (roasted pork): chāshū is a slice of tender pork, often braised or roasted, which brings a melt-in-the-mouth texture and a rich flavour to your ramen. It is often prepared with a sweet and savoury marinade that intensifies its taste.

Egg: it is often marinated in soy sauce and served in the ramen to add richness and depth of flavour.

Bean sprouts: bean sprouts are crunchy and slightly sweet. They add a crunchy texture and a freshness that is much appreciated to balance out the richness of the other ingredients.

Bamboo shoots (menma): menma is a traditional Japanese condiment made from fermented bamboo shoots. It brings a slightly tangy flavour and a tender yet slightly crunchy texture that complements the ramen perfectly.

And many more, from the traditional to the completely reinvented with European influences. Whether you choose to dedicate time to preparing a complex and original ramen recipe or to follow a quick and simple method, the important thing is that you enjoy it! The recipe can be adapted to your preferences, such as a vegetarian ramen, and your means.

Finally, let us not forget instant ramen, which are very popular both in Japan and abroad. Although some people enjoy them as they are, it is perfectly possible to enrich them with toppings to create an even more flavourful experience.

What should ramen noodles be served in and with which utensils?

Ramen are served very hot in a large, wide bowl, which allows them to cool down quickly. To prepare them, the noodles are placed in first, followed by the various toppings, before the boiling broth is poured over. It is important to eat them quickly, as the noodles continue to cook in the broth. Use chopsticks to slurp up the noodles, then drink the broth directly from the bowl, as you would a soup. There is no need to finish the broth. A spoon will make it easier to enjoy the broth.

Ramen broth, endless combinations

Ramen are prized for their versatility and depth of flavour. This simple, comforting dish can be adapted to suit all tastes: thick or thin noodles, light or rich broths, and varied toppings such as marinated egg, chashu (braised pork), or bamboo shoots. In Tokyo, for example, thousands of ramen restaurants — from street stalls to Michelin-starred establishments — serve this iconic dish. Today, the ramen phenomenon extends well beyond Japan's borders, winning over lovers of Asian cuisine the world over.

What are the origins of Ramen?

These wheat noodles, originating from China, made their appearance in Japan at the beginning of the 20th century. Traditionally served in broths flavoured with soy sauce or miso, they gained popularity with the arrival of instant noodles. Ramen soup is one of the most popular dishes in Japan and comes in a multitude of variations. This dish is mainly composed of a flavourful broth, to which ramen noodles and various ingredients are added, such as meat (for the delicious chicken ramen), eggs, vegetables, and even fish. While it is perfectly possible to prepare ramen soup at home, there are also dehydrated versions of ramen noodles ready in just a few minutes for a quick meal. There are different types of noodles in Japan: somen noodles, udon noodles, and soba noodles.

The 4 types of ramen available at Nishikidôri

Ramen, this iconic dish of Japanese cuisine, comes in several varieties to satisfy all tastes. Each type of ramen is prepared with a broth, noodles and specific ingredients that influence the depth of flavour and the texture of the dish. Depending on personal preferences, it is possible to choose between ramen with a light or richer broth, and to add various toppings to personalise the dish. These different types of ramen noodles offer a true immersion into Japanese gastronomy. At Nishikidôri, our online and Paris-based grocery store offers a wide selection of ramen and associated products to enrich your culinary creations.

Shoyu ramen

Shoyu ramen is one of the most popular styles. Its soy sauce-based broth is generally clear and lightly salted, offering a delicate yet rich flavour. It is often infused with ingredients such as garlic, ginger and dried fish, creating a perfect combination of umami. The broth is sometimes accompanied by grilled meats, marinated eggs and fresh vegetables.

Miso ramen

Miso ramen stands out for its thicker and richer broth, thanks to the use of fermented miso paste. This type of ramen offers more complex and deep flavours, with a slightly sweet and salty note. Perfect for lovers of hearty broths, white miso and red miso ramen are often garnished with sautéed vegetables and minced meat.

Tonkotsu ramen

Tonkotsu ramen is characterised by its creamy and thick broth, prepared from pork bones boiled for many hours. This process intensifies the richness of the broth, creating a smooth and silky texture that coats the noodles exquisitely. This type of ramen is ideal for lovers of robust and comforting flavours. We also offer a vegan tonkotsu version.

Vegetarian Ramen

For those who prefer a meat-free option, vegetarian ramen is a healthy and tasty alternative. Their broth is generally based on vegetables, miso or soy, and their flavour can range from light and refreshing to rich and deep, depending on the ingredients used. Vegetarian ramen can be garnished with tofu, fresh vegetables, seaweed, and sesame seeds.
