Ingredients (for 4 people)

  • 400ml of soy milk x2
  • 2 tablespoons of sugar x2

  • Hon'kuzu starch ref: 40 g x2 ref NISHK4-M
  • Vanilla soy sauce syrup ref NISGOTO19
  • 1 passion fruit and small red berries

Recipe preparation

1. Prepare the black sesame blancmange

- In a saucepan, pour 400 ml of soy milk, 2 tablespoons of sugar, 4 tablespoons of black sesame, and 40 g of Hon'kuzu starch.

- Heat over a medium heat, stirring regularly to prevent the mixture from sticking.

Tip: Before adding the starch to the saucepan, crumble it well to help it dissolve more easily.

- Remove from the heat when the mixture thickens and becomes smooth.

- Pour into small containers or moulds of your choice, leave to cool at room temperature and refrigerate for one hour before serving.

Leave to cool at room temperature, then place in the refrigerator for at least one hour to achieve a firm texture.

2. Prepare the white sesame blancmange

- Repeat exactly the same steps with the soy milk, the sugar, the white sesame seeds and the Hon'kuzu starch.

3. Plating the dessert

- When serving, drizzle a little vanilla soy sauce syrup over each portion of blancmange.

- Add a spoonful of small berries for a tangy and refreshing note.
