

Tuna salad "tataki" style with sesame paste sauce
Ingredients
Ingredients for 4 people
- 400 g of tuna fillet,
- 1 red pepper,
- 1 carrot,
- 1 black radish,
- 1 sprig of parsley,
- 1 tablespoon of toasted black sesame seeds.
For the sauce:
- 3 tablespoons of sesame paste white,
- 1 tablespoon of soy sauce,
- 2 tablespoons of apple juice,
- 2 tablespoons of rice vinegar,
- 1 teaspoon of grated ginger.
"Tataki", also known as "tosa-mi", is a preparation technique for meat or fish in Japanese cuisine.
"Tataki" consists of quickly searing the meat and then briefly marinating it in vinegar. The meat is then finely sliced and seasoned with ginger. Discover the techniques of Sachiyo Harada.
Ingredients for 4 people
- 400 g of tuna fillet,
- 1 red pepper,
- 1 carrot,
- 1 black radish,

- 1 tablespoon of toasted black sesame seeds.
For the sauce:
- 3 tablespoons of white sesame paste,
- 1 tablespoon of soy sauce,
- 2 tablespoons of apple juice,
- 2 tablespoons of rice vinegar,
- 1 teaspoon of grated ginger.
Preparation "tataki" style:
1. Peel the black radish and the carrot. Slice them finely with a peeler or mandoline.
2. Finely slice the red pepper.
3. In a small bowl, mix all the ingredients for the sauce.
4. Heat a frying pan and quickly sear the tuna on both sides (it should be raw inside and seared on the outside), then cut it into 5 mm thick slices.
5. Place the vegetables and the tuna on the plate.
6. Drizzle with the sauce and scatter with black sesame.
