Ingredients:
- 2 to 3 chicken thighs
- 1 onion
- 1 clove of garlic
- 1 teaspoon of freshly minced ginger
- 2 potatoes
- 1 to 2 carrots
- 1 handful of green beans
- 2 tablespoons of soy sauce Uzukuchi (ref. NISSK21)
- 40 g of Japanese curry (ref. NISTAA1/NISTAA2)
- 60 g of dashi stock (ref. NISTYT022): allow 10% stock and the rest in water.

Japanese curry preparation:
Prepare the ingredients:
Debone the chicken thighs and remove the skin. Cut them into large cubes.
Peel the vegetables: cut the carrots on the diagonal, chop the potatoes into pieces, and finely slice the garlic and onion.
Sauté the aromatics:
In a sauté pan, heat a drizzle of olive oil. Add the onion, garlic and ginger. Sauté without browning.
Adding the ingredients:
Add the chicken: Incorporate the chicken pieces and brown them on all sides.
Add the dashi stock and vegetables: Pour 50 cl of dashi stock, then add the carrot and potato pieces. Leave to simmer over medium heat for approximately 20 minutes.
Add the green beans and curry: Five minutes before the end of cooking, add the green beans cut into 3 cm pieces.
Japanese curry preparation:
Dissolve the Japanese curry in 10 cl of dashi stock, then incorporate it into the sauté pan. Continue cooking for 5 to 10 minutes.
Plating up: Prepare plates by arranging a portion of Japanese rice accompanied by the Japanese chicken curry.
