Tokubetsu junmai, or special pure sake, is a special designation reserved for high-quality sakes, those traditional and indigenous rice wines that have become a powerful symbol of Japanese national culture.





Description
The Iwate No Jizake Tokubetsu Junmai is a pure rice sake carefully brewed. This special Junmai sake offers a soft and full-bodied taste. The rice is polished to 60% and brewed during the coldest season of the year, creating a harmonious blend of gentle and pure flavours.
A 60% polishing removes impurities, and a slow infusion during the coldest season leaves only pure umami flavour. This is a pure rice sake with a rich, deep and pleasant taste. The aromas are fine and delicate, slightly milky, evoking melon, banana, yellow plum and mirabelle, with subtle brioche and toasted accents.
The palate is generous, supple, indulgent, round, buttery, spiced and fruity, evoking stewed banana, offering a pronounced umami, with a slight acidity and astringency on the finish.
