This sake is made entirely from Gin-no-sato sake rice, a rice produced using a special cultivation method called "rapeseed flower cultivation", which uses healthy soil requiring no herbicides and organic fertilisers made from the pressed lees of rapeseed.

We recommend this sake with creamed poultry, goat's cheese, blue-veined cheeses, country-cured ham, a scallop carpaccio, steamed or grilled white fish.

Palate: sweet and fruity sake with notes of melon, banana and yellow fruits, lovely fresh acidity

Description

On the nose, fruity, floral, fresh, soft, mellow notes emerge — yellow fruits, banana, ripe melon, pear, yellow peach and very ripe red apple. Subtle lactic notes are also perceived. The palate is rich, smooth, fruity, mellow, pleasant and balanced. We love the freshness, the balanced acidity, the sweetness, and the bitterness on the finish. One finds accents of melon, cereals, unroasted almonds and the typical crispness of the Kumamoto yeast, all very pleasant.

The finish acidity is remarkable. This balanced, very interesting saké is a great pleasure to taste. One appreciates the cereal and rice character. The Saisai offers a beautiful length and a subtle fragrance.

Zuiyo

Founded in 1867 in Kawashiri, a historic hub of the rice trade under the Hosokawa reign, Zuiyo Co. was the first brewery to transition local production from akazake to sake, playing a major role in its development in Kumamoto, notably through the establishment of the Sake Institute in 1909.

Today led by Kentaro Yoshimura, who is closely involved in production, the house collaborates with local rice farmers to craft award-winning sakes, favouring lightly polished, fertiliser-free rice in order to fully reveal its natural potential. Despite the damage caused by earthquakes, the brewery continued its operations thanks to the support it received, drawing on the consistent groundwater from Aso, and pursues an approach combining the preservation of traditions, innovation, and the promotion of the Kumamoto yeast to create balanced, expressive sakes in harmony with gastronomy.
